These Chefs‘ First Kitchen Jobs Made Them Who They Are Today (By Elyssa Goldberg, Bon Appetite Magazine, March 9, 2017)

You don’t just decide you want to be Daniel Boulud, and then wake up one morning steering a Michelin-starred restaurant. Like the rest of us, chefs had unglamorous teenage jobs that they still laugh about—manning concession stands at amusement parks, peeling thousands of shrimp in an alleyway behind cramped restaurants, creating sandwich artistry at Subway. For the sake of nostalgia, I spoke to a few chefs who started from the bottom and now are here about their first kitchen jobs.
